6 skinless, boneless chicken thighs
Spice rub (see below)
Salt
Pepper
Spice Rub
If using whole spices, toast spices until fragrant, then grind and measure out the appropriate amount of each of the following:
1 tbsp coriander
1 tbsp cumin
1 tsp cinnamon
¾ t fennel
¾ t tumeric
½ t fenugreek
¼ t brown mustard seed
¼ t aniseed
¼ t ground ginger
1. Rub spice mixture evenly over chicken, and let it sit in the fridge for at least 30 minutes.
2. Season with salt and pepper to taste.
3. Grill or broil the chicken until fully cooked through and nicely browned.
